This is the best tomato soup I've ever had! I found it on Allrecipes.com. Unfortunately, I do not have a garden full of tomatoes to make more to freeze...my in-laws were leaving on a trip and gave me a whole box. So I went hunting for some good recipes and found one! You can go on there and read on the reviews of changes people made to it, but I followed it exactly and it came out tasting heavenly! I even used dried basil because I couldn't find it fresh at the store. ENJOY!
Rich and Creamy Tomato Basil Soup

  • 4 tomatoes - peeled, seeded and diced
  • 4 cups tomato juice
  • 14 leaves fresh basil
  • 1 cup heavy whipping cream
  • 1/2 cup butter
  • salt and pepper to taste

Directions
  1. Place tomatoes and juice in a stock pot over medium heat. Simmer for 30 minutes. Puree the tomato mixture along with the basil leaves, and return the puree to the stock pot.
  2. Place the pot over medium heat, and stir in the heavy cream and butter. Season with salt and pepper. Heat, stirring until the butter is melted. Do not boil.

thank's for the soup recipe, I am totally all about hot chocolate and soup on cold days so we will be putting this on our list :)
